WCT Vegan Zucchini Pancakes Recipe

 

Benefits of Zucchini:

Zucchini, also known as courgette, is actually a fruit but often times cooked as a vegetable. It is available in both yellow and green and provides a lot of benefits. 

Due to the high water content of zucchini, they are extremely low in calories, yet they are very dense in fiber. This allows one to feel satiated after consuming a zucchini rich dish.  

Fiber has also been studied to help decrease one's risk of cancer and promote digestion as well as gut health.

Zucchini is also gender specific. Due to the high levels of folate, this fruit is great for women who are planning to get pregnant or who are currently pregnant in helping prevent neural tube defects in the child. Due to the high levels of phytonutrients in zucchini, this fruit helps decrease symptoms of benign prostatic hyperplasia (enlarged prostate) in men.

Benefits-of-Zucchini

Ingredients:

3 Zucchinis

3 bananas

3 tbsp of nut butter

1 tsp of cinnamon

1 tsp of nutmeg

Vegan-Zucchini-Pancakes

Total Calories:

47 (based on 1 cake)

 

Macros:

Carbohydrate: 9g

Fat: 2g

Protein: 1g

 

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Peel one banana, break into small pieces, and add it to a large mixing bowl

Step 2: Using a fork, mash up the bananas as seen in the image below

Step 3: Repeat steps 1 and 2 for the other 2 bananas

Step 4: Set aside mixing bowl with mashed up bananas

Step 5: Using a food processor or grater, grate all zucchini

Step 6: Add the grated zucchini to the large mixing bowl containing the mashed up bananas and mix

Step 7: Next, add the almond butter and cinnamon

Step 8: Mix well

Step 9: Using a griddle add 1 tsp of oil and put the flame on low-medium heat (low if you like light colored pancakes, medium if you like the cakes crispy)

Step 10: Using a 1/4 measuring cup, add the mix to the measuring cup and then place on the griddle to form a circle

Step 11: Flatten out the circle so that the height is about 1cm

Step 12: Allow the cakes to cook for about 5 minutes on each side, before flipping (You may need to use two spatulas to flip the cake)

Step 13: Once the cakes have been cooked sufficiently on both sides they are ready to be served

Note: The ingredients listed above makes about 15 1/4 cup pancakes. Feel free to store them in the refrigerator and bring them with you to work or to consume as a breakfast option.
