WCT Pepper Stir Fry Recipe
Benefits of Bell Peppers:
Bell peppers are by far one of our favorite vegetables of all time. They are very low in calories and are extremely rich in Vitamin C, and carotenoids, a type of antioxidant. One medium sized red bell pepper contains over 160% of the recommended daily allowance for vitamin C! The carotenoids found in bell peppers are protective against certain types of neoplastic cells, promote eye health, and helps prevent chronic disease such as heart disease.

1 cup of Kale
1 tbsp of garlic
1 tsp of extra virgin olive oil (EVOO)
Total Cook Time:
Step 1: Using a cutting board, cut the peppers and onions into small cubes and set aside
Step 2: Place a large pan or wok over medium heat, and add the EVOO
Step 3: Once the oil has been heated, add the garlic and onions
Step 4: Cook for about 5 minutes or until the onions begin to brown, stirring constantly
Step 5: Next, add the peppers
Step 6. Let the peppers cook for about 5 minutes, stirring frequently
Step 7. Lastly, add the kale
Step 8. Add in crushed red pepper and paprika or whatever seasonings you desire to stir for an additional five minutes
Step 9. Enjoy
These ingredients yield about 5-6 cups of stir fry. We recommend consuming 1/2 cup as your daily serving, therefore you will have 6 meals containing stir fry.
