Did you know that Apricots are chock full of nutrition?
They contain high levels of vitamin A, C, E, K, beta-carotene, iron, potassium, manganese, magnesium and phosphorous. Additionally, they are a great source of dietary fiber helping to regulate your digestive system and aid in constipation.
You can even eat this fruit fresh or dried. Try this recipe and enjoy all of the benefits this fruit offers.
This is one of our all-time favorite recipes!
1 3/4 cup raw oats
4 tbsp chia seeds
40g chocolate whey protein (or any type of chocolate protein)
1-2 tbsps olive oil
1 tasse of cacao
2 tbsp organic peanut butter (or any type of nut butter)
150 (based on 1 muffin)
Total Cook Time:
Step 1: Preheat oven to 375 degrees
Step 2: On a large cutting board, cut: banana, figs, and apricots into small pieces and put to the side
Step 3: In a large mixing bowl add: chocolate protein powder, chia seeds, and raw oats
Step 4: Add the sliced banana, figs, and apricots to the large mixing bowl
Step 5: Mix using a spoon
Step 6: Add the egg into the large bowl
Step 7: Add the olive oil and peanut butter
Step 8: Grate the cacao and mix all ingredients together
Step 9: Transfer the ingredients in the mixing bowl to a muffin pan
Step 10: Put in the oven at 375 degrees until cooked (it takes approximately 20 minutes) You'll know they are ready by sticking a knife in the middle of a muffin- if it is still moist and raw ingredients stick to the knife, they aren't ready yet.
Step 11: Once cooled, remove each muffin from the pan and serve
The above ingredients yield 12 muffins. The macro-nutrient values are based on 1 muffin. Feel free to store the additional muffins in the refrigerator.
