Benefits of Sweet Potato:

Sweet potatoes are one of those foods that are so delicious all by themselves. They are very easy to make and are extremely versatile.

Here are a few of their benefits: they boost immune system function, maintain water balance in the body, regulate blood sugar levels, facilitate digestion, increase blood levels of vitamin A, produce collagen which helps our skin maintain it's elasticity, and even contains antioxidant, anti-inflammatory, antibacterial and even antifungal properties!

Per cup, sweet potatoes contain 214% of the daily value of vitamin A, 52% of the daily value of vitamin C and 50% of the daily value of manganese. Foods that contain a daily value >= 75% of a nutrient are considered "excellent" whereas foods that contain a daily value >=50% are considered "very good."
