Per cup, sweet potatoes contain 214% of the daily value of vitamin A, 52% of the daily value of vitamin C and 50% of the daily value of manganese. Foods that contain a daily value >= 75% of a nutrient are considered "excellent" whereas foods that contain a daily value >=50% are considered "very good."

Ingredients:

1/2 of an avocado

1 sweet potato

1 egg

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Bake the sweet potato 

Step 2: Cut the sweet potato in half and remove the inner contents of one side

Step 3: Using a small frying pan, add a tbsp of extra virgin olive oil and turn the flame on at medium heat

Step 4: Crack open the egg and attempt to keep the yolk intact (over-easy)

Step 5. Cook the egg for approximately 5 minutes or until the egg is cooked to your liking

Step 6. Add the egg to the empty half of the sweet potato

Step 7: Thinly slice half of the avocado onto the side

Step 8: Enjoy
