WCT Mushroom Pizza Bites Recipe
Benefits of Mushrooms:
Mushrooms are one of those foods that are often overlooked as a great source of energy an nutrition.
Mushrooms provide a great source of protein, fiber, vitamin B, vitamin C, calcium, and the antioxidants selenium and ergothioneine (ERGO).
Ergothioneine is a powerful antioxidant unique to mushrooms. It has been studied extensively and has been shown to protect the mitochondria from oxidative stress and reduce the damage UV rays cause.
Instead of using mushrooms as a pizza topping, try using them as the pizza base!

1 package of Mushrooms
1 cup of Tomato sauce
2 oz Cheese
2 tbsp of Garlic
1/2 of a small Onion
23 (based on 1 mushroom)
Total Cook Time:
Step 1: Preheat oven to 375F
Step 2: Rinse each mushroom under a light stream of cool water
Step 3: Remove the stem from each mushroom and put to the side
Step 4: Using the end of a spoon, scoop out any remnants of the stem still inside the mushroom
These next steps are for "stuffed" mushroom pizza bites.
If you do not want "stuffed" mushroom pizza bites skip to step 10
Step 5: From the stems, you just removed, dice them up on a cutting board
Step 6: Add 1 tsp of extra virgin olive oil and 2 tablespoons of garlic to a frying pan.
Step 7: Dice up the onion and add to the frying pan.
Step 8: Now add the mushroom stems and mix
Step 9: Add the tomato sauce to the frying pan mixture
Step 10: Put the mushrooms on a baking sheet with a piece of aluminum foil
Step 11: Add some cheese to the bottom of each mushroom
Step 12: Add the frying pan mixture on top of the cheese
Step 13: Bake in the oven for approximately 20 minutes or until the mushrooms become golden
