WCT Gnocchi Pesto Recipe

 

What is Gnocchi:

Gnocchi translates to "lumps" in the Italian language, referring to the shape and texture of the food. They are most commonly derived from potatoes mixed with egg, olive oil, and flour, however, a number of other ingredients could be added as well such as cheese, basil, and mushrooms. Gnocchi could also be derived from sweet potatoes which is delicious in and of itself! 

The way in which people prepare gnocchi varies depending on geographic location, but traditionally it is prepared using many of the same sauces that one would use when making pasta. The recipe listed below happens to be one of our favorite ways to prepare gnocchi as it contains our two favorite ingredients- pesto and sun-dried tomatoes.

Ingredients:

½ cup of basil gnocchi

4 oz Salmon

3 Sun-dried Tomatoes

1 tbsp of Basil Pesto

Carbohydrate: 30g

Fat: 8g

Protein: 25g

 

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Boil 5 cups of water

Step 2: While the water is boiling, grab a cutting board and cut up the sun-dried tomatoes into small cubes and set aside

Step 2: Once the water begins to boil, add the gnocchi 

Step 3: As the gnocchi cook, they will begin to rise to the surface of the pot.

Step 4: When all gnocchi have risen to the top of the water, shut off the flame

Step 5: Using a strainer, strain the gnocchi over the sink

Step 6: Add the gnocchi to a glass container

Step 7: Add 4 oz of cooked salmon

Step 8: Add 1 tbsp of pesto 

Step 9: Add the cut up sun-dried tomatoes 

Step 10: Enjoy
