Benefits of The Egg Salsacado:

The Egg Salsacado is a delicious blend of healthy fat, and protein that keeps you satiated throughout the morning hours. Various nutritionists refer to eggs as a superfood, because they contain many essential vitamins and nutrients, including omega-3 fatty acids.

For those of you who are concerned about the cholesterol content in eggs- the liver actually produces the vast majority of the cholesterol found in the body. When the body senses an increase in dietary cholesterol, the liver will automatically decrease the amount being produced in a feedback system. Cholesterol is an important compound as it aids in cell membrane stability and acts as a substrate for various hormones.

Additionally, studies have shown that eggs can actually increase our 'good cholesterol' also known as high-density lipoprotein, or HDL, and decrease our triglycerides, which are linked to a decreased risk of heart disease.

Ingredients:

2 Whole Eggs

½ Avocado

3 oz Tofu

1 tbsp Mango Peach Salsa

 

Total Calories:

385

 

Macros:

Carbohydrates: 12g

Fat: 29g

Protein: 21g

 

Total Cook Time: 

8-10 minutes

 

Recipe:

Step 1: Add 1 tsp of olive oil to a small frying pan on low-medium heat

Step 2: Cut the tofu into small, 1 inch cubes and add to frying pan

Step 3: Let the tofu cook until the edges begin to brown

Step 4: Add eggs directly into the pan

Step 5: Cook the eggs to your liking (scrambled, over easy, etc)

Step 6: Add cooked eggs and tofu to a bowl

Step 7: Top with the avocado and mango peach salsa

Step 8: Enjoy!
