WCT Curried Peabanzos Recipe

 

Benefits of Peas:

Green peas, which are actually fruits and not vegetables are one of the most nutritious foods you could consume. They are a great source of plant-based protein for those individuals who want to consume fewer animal products and they are also low in overall calories. The protein found in peas is of such great quality that many protein powders are beginning to use it as one of their key ingredients. 

They contain large amounts of many essential and nonessential vitamins and minerals such as vitamin B1, B2, B6, C, K, manganese, fiber,  copper, phosphorous, niacin, molybdenum, zinc, magnesium, iron, potassium, choline, and folate. 

Peas can be added to almost any dish to increase the protein content of the meal. 

They are also cheap!

 

Benefits-of-Green-Peas

Ingredients:

1 1/2 cups of peas

1/2 cup of red lentils

3 small sweet potatoes

1 can of garbanzo beans

1 cup of coconut milk

1 tsp of extra virgin olive oil (EVOO)

2 tbsp of curry powder

Curry-Recipe-Vegetarian

Carbohydrates: 15g

Fat: 4g

Protein: 5g 

 

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Bake the sweet potatoes.  (Check out How to Make sweet potatoes Efficiently

Step 2: Cut up the sweet potato into small chunks and set aside

Step 3: Using a medium-sized pot, add a tsp of EVOO, and turn the flame on to medium

Step 4: Add the peas, lentils, and garbanzo into the pot and stir occasionally

Step 5: Let the bean mixture cook for about 5-10 minutes

Step 6. Next, add the coconut milk and sweet potatoes

Step 7. Stir frequently

Step 8. Lastly, add the curry powder and any other spices you desire while you continue to cook and stir for another 5 minutes

Step 9: Enjoy!

 

The above ingredients yield approximately 4.5 cups of curried peabanzos. We recommend consuming 1/2 cup as your daily serving, therefore you will have 9 meals containing curried peabanzos.
