WCT Cauliflower Pizza Recipe


The Benefits of Cauliflower

Cauliflower is often overlooked due to the fact that it is not a ‘green vegetable.’ Nonetheless, it has many health benefits that other vegetables do not possess. One very important nutrient that is found in cauliflower is called sulforaphane. Sulforaphane has been shown to improve blood pressure and kidney function, and also protect the lining of our stomach by inhibiting bacterial overgrowth by Helicobacter pylori, or H pylori- the bacteria linked to stomach ulcers. Additionally, cauliflower has many anti-inflammatory and anti-oxidant properties.

This vegetable is extremely versatile and could be eaten in a variety of ways, even as a crust on your pizza! Give it a try and let us know what you think.  




1 Small-medium sized head of cauliflower

3oz cheese

¾ cup tomato sauce

1-2 eggs (depending on the size of cauliflower)

2 tbsp pesto sauce (optional)

1 tsp garlic

1 tsp parsley

1 tsp oregano

1 tsp red pepper

30 minutes



Step 1: Preheat oven to 400 degrees F

Step 2: Cut the cauliflower head into small chunks and add to a food processor. (If you do not have a food processor, using a knife and cutting board, finely chop cauliflower)


Step 3: Using the "pulse option", pulse the food processor until cauliflower has been finely chopped. 


Step 4: Add the finely chopped cauliflower to a large mixing bowl

Step 5: Add garlic, parsley, and oregano to the large mixing bowl and mix well using a spoon

Step 6: Add the egg(s) to the bowl and mix


Step 7: Using a circular pizza pan, add a sheet of aluminum foil, then add olive oil. Spread the olive oil so that the entire surface area of the aluminum foil is covered

Step 8: Add the contents of the mixing bowl to the aluminum foil

Step 9: Create a circular shape with the pizza crust (if you prefer thin crust, flatten out the ingredients creating a larger pizza)


Step 10: Put the pizza in the oven for about 25 minutes or until the edges are brown

Step 11: While pizza crust is baking, thinly slice the mozzarella cheese and any other toppings you would like to add to your pizza

Step 12: Once the edges of the pizza have browned, take it out of the oven and add sauce, cheese, and any other toppings you would like 

Step 13: Put pizza back in the oven and cook for an additional 15 minutes or until all toppings have been cooked appropriately

Step 14: Enjoy
