Benefits of Carrots:

Carrots are one of the best sources of beta-carotene.  Beta-carotene gets converted to vitamin A in our body and is an extremely powerful antioxidant. Because of the high levels of beta-carotene in carrots, consuming them has been associated with a reduced risk of stroke and the prevention of various forms of cancer. Additionally, there have been studies conducted that demonstrated a reduced incidence of macular degeneration and improved eyesight from the conversion of beta-carotene to vitamin A.

Interestingly the consumption of carrots can also improve your oral hygiene due to the production of saliva, an alkaline fluid that protects your teeth and gums from foreign bodies known to cause cavities. Like most vegetables, carrots are also very high in fiber, helping to keep your digestive tract healthy. Carrots also boost your immunity due to the high levels of vitamin C. They have even been found to lower blood pressure because of the high levels of potassium which act to vasodilate or relax our arteries.

Ingredients:

8 carrots

3 bananas

3 tbsp of nut butter

1 tsp of cinnamon

1 tsp of nutmeg

Total Calories for 1 cake:

Macros for 1 cake:

Carbohydrate: 9g

Fat: 2g

Protein: 1g

 

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Peel the bananas, break into small pieces, and add them to a large mixing bowl

Step 2: Using a fork, mash up the bananas as seen in the image below and set aside

Step 3: Using a food processor or grater, grate the carrots as seen below

Step 4: Add the grated carrots to the large mixing bowl containing the mashed up bananas and mix

Step 5: Now, add the almond butter and cinnamon

Step 6: Using a large spoon, mix all ingredients together

Step 7: Add 3 tsp of EVOO to a griddle or large pan, on a low-medium flame (low if you like light colored pancakes, medium if you like the cakes crispy)

Step 8: Using a 1/4 measuring cup, add the mix to the measuring cup and then place on the griddle forming a circular shape

Step 9: Flatten out the circular cakes so that the height is about 1cm

Step 10: Allow the cakes to cook for about 5 minutes on each side, before flipping (You may need to use two spatulas to flip the cake)

Step 11: Once the cakes have been cooked sufficiently on both sides they are ready to be served

 

Note: The ingredients listed above makes about 15, 1/4 cup pancakes. Feel free to store them in the refrigerator and bring them with you to work or to consume as a breakfast option.
