WCT Roasted Butternut Squash Chips Recipe

Benefits of Butternut Squash:

Butternut Squash is a versatile vegetable that can be used in a variety of recipes.

Per cup, butternut squash contains 65 calories, 3g of fiber (highest amongst the different squash varieties), and close to 0g of fat. 

Butternut squash is a bit high in carbohydrates however, it contains polysaccharides that have been shown to reduce blood glucose levels, and improved insulin sensitivity.

Squash is also rich in many antioxidants, vitamins, and minerals including vitamin C, manganese, vitamin A, vitamin K, and carotenoids.

Ingredients:

Butternut Squash

Extra Virgin Olive Oil

Red Pepper

Total Cook Time:

20 minutes

 

Recipe:

Step 1: Preheat oven to 375F

Step 2: Slice butternut squash vertically using a cutting board

Step 3: Place aluminum foil on a baking sheet and add extra virgin olive oil

Step 4: Add the sliced butternut squash to the baking sheet

Step 5: Now, add additional extra virgin olive oil, red pepper, and any other spices you desire to the butternut squash

Step 6: Bake in the oven for approximately 30 minutes or until the chips become soft

Step 7. Enjoy
