WCT Apple Pumpkin Quinoa Recipe

Benefits of Quinoa:

Quinoa has been around for centuries and is considered the supergrain of the 21st century. It is one of the only grains that contains all NINE essential amino acids (Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Threonine, Tryptophan, and Valine). Quinoa contains more than twice the amount of fiber than other grains, helping to prevent constipation, hemorrhoids, heart disease, diabetes, and hypercholesterolemia.

This supergrain is also rich in several minerals most notably, iron, magnesium, riboflavin, and manganese. Iron attaches to hemoglobin to deliver oxygen to all of our tissues and organs and a deficiency of this mineral results in anemia which could cause serious consequences, especially for busy professionals. Shockingly, more than half of all Americans are deficient in magnesium. Magnesium is loaded with health benefits ranging from increasing energy levels, improving sleep, decreased symptoms of constipation and decreasing symptoms of anxiety.

Ingredients:

1/2 of apple

1/2 cup of pumpkin puree 

1 cup of quinoa 

2 cups of water

1 tsp of cinnamon

1 tsp nutmeg

120 (based on 1/2 cup)

Carbohydrates: 20g

Fat: 2g

Protein: 4g 

 

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Add the water to a small pot and heat over a high flame until it begins to boil

Step 2: When the water begins to boil, add in the quinoa, reduce flame to low and cover the pot with lid

Step 3: Using a cutting board, cut up the apple into small cubes

Step 4: When all of the water has been absorbed, and each quinoa has developed an outer white ring, add in the apple and pumpkin, and mix

Step 5: Next add in the cinnamon and nutmeg and any other spices you desire

Step 6. Enjoy

 

The above ingredients yield approximately 3 cups of Apple Pumpkin  Quinoa. We recommend consuming 1/2 cup as your daily serving, therefore you will have 6 servings for the week. Keep refrigerated.
