Pesto-Shrimp-Zucchini-Pasta

Benefits of Zucchini

Zucchini is an excellent vegetable high in antioxidants, potassium, beta-carotene, and B vitamins that offers a great alternative to traditional pasta. This alternative, also known as zoodles, offers many advantages as seen below. 

Zoodles-vs-Pasta

 

Ingredients:

1 zucchini

1 tbsp Pesto

1 sun-dried Tomato

1 tsp parmesan cheese

4 oz raw shrimp 

*Requires Vegetti*

Total Cook Time:

15 minutes

 

Recipe:

Step 1: Allow the frozen raw shrimp to thaw out

Step 2: Using the faucet, run the shrimp under a cool stream of water while removing the tails (Do not use hot water as this will begin cooking the shrimp)

Step 3: Once all the tails have been removed, set aside

Step 4: Using the vegetti, put the zucchini through the 'thick' side and begin creating pasta noodles

Step 5: When you have finished creating the noodles, grab a small wok, add 1 tsp of oil, turn the flame on low/medium, and add the noodles

Step 6: Cook the noodles for a couple of minutes, constantly stirring. Feel free to add any spices you would like (red pepper, parsley, oregano) 

Step 7: Remove the noodles and put them in a glass container

Step 8: Using the same wok, add 1 tsp of oil, turn the flame on low/medium and add the shrimp

Step 9: Cook and stir the shrimp until all shrimp have turned from grey to pink

Step 10: Add the pink shrimp to the zucchini pasta

Step 11: Add 1 tbsp of pesto and top with sun-dried tomato and parmesan cheese
